I literally have days that I don't even want to get out of bed, much less prepare a full blown meal my picky little eater will love. So I threw together this super simple, but flavorful recipe for my One Pan Cornish Hen & Veggies.
So easy to prep, cook and serve; I almost didn't know who I was anymore..
First off, we'll need to clean and prep our hens. I do this by using kitchen shears to cut out the backbone of the hens, so that they can lay flat in the pan. Leaving the skin on, season generously with the all purpose seasoning, dried rosemary and dried basil, salt and pepper (making sure to get under the skin.) We can set the hens aside while we prep our veggies. Making sure the potatoes and carrots are thoroughly washed and halved, then toss together with the garlic, onion 1Tbsp of coconut oil, the all purpose seasoning, salt and pepper.
Coat your baking dish with a little coconut oil and arrange your seasoned veggies evenly in your dish. Place the hens right on top of the veggies, cover with tin foil and bake at 375F for 25-30 minutes. Once cooked through, throw your plum tomatoes in your baking dish, and cook for another 5 minutes (just enough to release their juices).
Tip: In order to get that really nice golden brown on top of your hens, broil them at 500F for 30 seconds - 1 minute, making sure to keep an eye on them the entire time so that they don't over brown and start to burn.
Once done, just portion, serve and enjoy!
Also, having clean up be this super simple doesn't hurt..
