Set your oven to 350F and grease a long baking dish to hold your Naan. (You can grease your dish with either butter or coconut oil-my favorite!) At the same time, place a small saucepan to simmer with approximately 1 1/2 cups of water and 2 Tbsp of vinegar (This is to poach your eggs). Place your Naan in the greased dish, then distribute 1 1/2 Tbsp of garlic evenly on each Naan. Tear your prosciutto by hand and arrange on your Naan. Do the same with your mozzarella. Place in the oven to bake for about 5-7 minutes until prosciutto is crispy.
Meanwhile, drop your eggs in one at a time, in the barely simmering water and swirl to keep the white together. Your egg should cook for approximately 2-3 minutes. Remove them and set aside.
Once your Naan is ready, it's time to plate. With your warm Naan, arrange your kale, set your poached egg in the center of your Naan & lightly sprinkle with salt & pepper. The last step is adding my special sauce (I'll show you how to make that next!), drizzling lightly all over the Naan.
